Grammie's Classic Italian Frittata

I’m half Italian. We Italians have strong opinions and love food, and my Grammie is no exception! She’s traveled the world and tasted pretty much every cuisine there is. When I find myself unsure of something on a menu she can not only tell me what it is but how it should be properly prepared. My Grammie loves food so much that her preferred name to call someone who has the misfortune of making her angry is “you meatball!”

One of my favorite of Grammie’s creations is her Frittata, it’s simple and delicious. The key is to caramelize the onions before adding the eggs. This is my go to egg dish for any brunch, it’s sure to impress and easy to prepare. “I’m having people over for brunch, can you make your egg thing?” is a request I’ve gotten more than once!

Without further ado, here’s what you’ll need and how to make it:

 

Ingredients

8 Eggs

Italian Flag for some Italian Veggies!

1 Onion - diced

1 large Red pepper - diced

1 Cup Mushrooms - chopped

2 Cups Baby Spinach

1 TBSP Olive Oil

Splash of Almond Milk

Salt

Black Pepper

Garlic Powder

Oregano, Rosemary, and Thyme

Fresh parsley

Optional – ½ Cup to 1 Cup shredded Cheese of choice (For a Paleo/Non-Dairy option Sub Daiya Mozzarella shreds, the melt nicely)

 

Directions

1. Preheat oven to 375.

2. Heat olive oil on medium heat in a skillet or large non-stick pan. When the oil is hot add in the onion, red pepper, and mushrooms. Sautee until onions have caramelized.

3. While the veggies are cooking scramble the eggs together in a large bowl. generously Salt and Pepper the eggs then add a few dashes of Oregano, Rosemary and Thyme. Add a splash of almond milk and mix.

4. Once the onion has caramelized add in the spinach. When the Spinach has wilted generously sprinkle in some Salt, Pepper, and Onion powder and mix.

5. If you are using cheese create a cheese layer over the veggies and let the cheese melt a bit.

6. Pour the egg mixture into the skillet and let cook until the edges begin to set. When that happens place the skillet into the oven and cook for about 15 minutes or until the top of the Frittata is firm.

7. Garnish with fresh parsley, serve over mixed greens and sliced cherry tomatoes if desired.
